                                      Kale or borecole is a form of cabbage it can be green or purple, in which the central leaves do not form a head.  Kale is very high in beta carotene, vitamin K, vitamin C, lutein, zeaxanthin, and reasonably rich in calcium. Kale, as with broccoli and other brassicas, contains sulforaphane (particularly when chopped or minced), a chemical with potent anti-cancer properties.  Boiling decreases the level of sulforaphane; however, steaming, microwaving, or stir frying do not result in significant loss.[2] Along with other brassica vegetables, kale is also a source of indole-3-carbinol, a chemical which boosts DNA repair in cells and appears to block the growth of cancer cells.   Kale is also a good source of carotenoids.                                       We often see pak choi or more commonly known as bok choy or Chinese white cabbage in the produce aisle of our supermarket and listed in the ingredients of various soups, stews and stir-fry dishes.  Many of us probably omit this vegetable in favor of more familiar forms of cabbage and greens, but to do so would be a large mistake, because this super Asian vegetable has a number of useful health benefits and is rich with vitamins and minerals essential for healthy living.This leaf vegetable is a member of the cabbage family and very popular in Asian cuisine.  Also known as Chinese white cabbage, among other names, it's frequently found in wonton soup and many stir-fry dishes ordered in Japanese and Chinese restaurants. Mildly flavored with a tender sweetness, it's a welcome accompaniment to many meals without being overpowering.  Important health benefits that have been associated with consuming Chinese white cabbage include its abilities to aid in healthy digestion.  It's also high in vitamin-A, vitamin-C, beta-carotene, calcium and dietary fiber.  This leafy vegetable is low fat, low calorie, and low carb and also contains potassium and vitamin-B6.   Some of the vitamins found in this super vegetable are also powerful antioxidants, making this tasty cabbage an extremely healthy treat.  The rich amount of beta-carotene inherent in this super vegetable can help to reduce the risk of certain cancers.   Beta-carotene has also been known to reduce the risk of cataracts.  It's also an excellent source of folic acid and can also contain other healthful nutrients like iron, depending on the soil where it was grown.

                                      Mei qing, a baby-type variety of bok choy, has light green stems and leaves. 
                                      Also called baby Bok Choy, this small plant, up to 8 inches high.  This plant is similar in shape to bok choy, although the stems or stalks tend to be a light green instead of pure white.  Mei Qing has the same vitamins and nutrients as Bok Choi.

                                      Tatsoi grows in a rosette and has small, sturdy emerald spoon-shaped leaves with
                                      a sweet, earthy, mustardy taste. Its stalks are sweet and almost creamy. The
                                      texture is similar to mache, but much heartier. This green is popular in spring
                                      mix/mesclun mixtures. Nutritional Value Tatsoi is high in beta-carotene and
                                      Vitamins A, C, and K;
                                      they also have good amounts of calcium, potassium,
                                      phosphorous and iron
                                      .

                                      Purple Choi  (CV/LO)

                                      A favorite baby leaf pak choi in Japan, this variety is gaining popularity
                                      everywhere else. This hybrid dark purple leaf pak choi has green petioles and is
                                      as stunning in the garden as on the plate.is tender, mildly flavored and can be harvested at any stage baby leaves for salads or whole plants at full maturity (6-8" tall) for cooking.

                                      Organic Honey Crisp Apples (OR/US)

                                      Honey Crisp is the new sensation in the apple world, a large, sweet apple with crisp  "to-die-for" texture!  Believed to be an offspring of Macoun and Honey Gold,  Honey Crisp was introduced in 1991 by the University of Minnesota breeders at  Excelsior, MN.   Both its parents were noted for having excellent flavor,  moderate sized fruit, and "ok" texture.  Honey Crisp's flavor is perhaps not as  dramatic as Macoun at its peak, but is first rate. The Kicker in Honey Crisp is  its  crisp texture -- no other apple matches its crispness.

                                      Fuji Apples   (OR/US)

                                      Fuji is surely one of the more attractive modern apple varieties. Its main
                                      characteristic is the lovely pink speckled flush over a yellow-green background.
                                      It is also crisp and juicy, with dull white flesh which snaps cleanly. The
                                      flavor is predominantly sweet, very refreshing (especially if slightly chilled).

                                      Organic Navel Oranges (OR/US)

                                      Picture
                                      Navel oranges are the ones with the button formation opposite the stem end. Considered the world's finest orange for eating, navels are seedless, and they peel and segment easily.
